If you love fall-apart tender meat with rich, Mexican inspired flavors, this Texas Barbacoa Recipe is about to become one of your favorite ways to enjoy beef. 

This slow cooker barbacoa recipe is a great option for busy days when you need something hearty and satisfying. Traditionally, Mexican barbacoa is cooked in an underground pit lined with maguey leaves or over hot coals.  If you have read any of my other blog posts then you will know that obviously, we will be more untraditional here and taking a more practical approach—one that lets the crock pot do all the work.

What Is Barbacoa?

Barbacoa is a slow-cooked, seasoned beef dish with deep roots in South Texas, San Antonio, and beyond. Traditional barbacoa is often made using beef cheek meat or even entire cow heads, cooked until the connective tissue breaks down and the meat becomes tender enough to shred beef effortlessly.

I don’t know about you, but I haven’t bought any beef cheeks lately at the Walmart. While beef cheeks are an authentic choice, they can be tricky to find at your local grocery store, so we are going to use a beef chuck roast instead. It still delivers a rich, meaty flavor with plenty of delicious options for serving.

To keep this Texas beef barbacoa flavorful and tender, we’re using a blend of spices and slow-simmered liquid that infuses every bite.

  • 3 lb plus Beef Chuck Roast – A great option for rich, beefy flavor.
  • 1 Whole Onion –We prefer to use sweet onion.
  • 1 cup Chicken Broth – Or swap for beef broth/beef stock for a deeper taste.
  • 2 Tbsp Lime Juice – Helps break down the connective tissue for that fall-apart tender meat.
  • 2 Tbsp Vinegar – Apple cider vinegar or white vinegar works. Use what you have.
  • 2-3 Tbsp Minced Garlic – Because you can never have too much garlic.
  • 2 Chipotle Chiles in Adobo Sauce + 1 Tbsp Adobo Sauce – Adds smoky, spicy depth.
  • 2 tsp Cumin, 1 Tbsp Oregano – Essential for that bold barbacoa meat flavor.
  • 6 Whole Cloves or ½ tsp Ground Cloves – Adds warmth and depth.
  • 2 tsp Salt, ¾ tsp Black Pepper – To enhance all the flavors.
  • 1-2 Bay Leaf, dried – A must-have for slow-cooked dishes.

Step-by-Step Cooking Process for Texas Barbacoa Recipe

Step 1: Prep the Meat

Start by trimming any silver skin off the beef chuck roast and cutting it into 2-inch chunks. This helps the meat cook evenly and allows the flavors to fully absorb. Add the meat to your slow cooker and toss in the bay leaf(leaves).

Step 2: Make the Sauce

In a large bowl, combine the chicken broth, lime juice, vinegar, garlic cloves, chipotle chiles, adobo sauce, cumin, oregano, cloves, salt, and black pepper. Peel and quarter your onion and add it to the mixture. Blend until smooth.

Step 3: Cook Low & Slow

Pour the blended barbacoa sauce over the seasoned beef, ensuring every piece is coated. Cover and cook on low heat for 8 hours or on high for 4-6 hours.

Step 4: Shred & Serve

About 30 minutes before the cooking process is done, use two forks to shred beef directly in the slow cooker. Let it soak up the flavorful juices before serving.

Can I make this in an Instant Pot?
Absolutely! Follow the same steps but set your electric pressure cooker to high for 60 minutes. Let the pressure release switch do a natural release before shredding.

How do I get that smoky flavor without an open flame?
The chipotle chiles in adobo sauce add a rich smoke flavor, but you can also mix in a teaspoon of smoked paprika. You can also sear the chuck roast chunks ins the skillet prior to slow cooking for added flavor!

What’s the final internal temperature for barbacoa?
You want it to reach at least 205°F for the best shredding texture.

Ingredients

  • 3 lb Beef Chuck Roast
  • 1 cup Chicken Broth
  • 1 Whole Onion
  • 2 Tbsp Lime Juice

Instructions

  • Cut your chuck roast into 2 inch chunks and put them in your slow cooker.
  • Add your bay leaf to the slow cooker as well.
  • Peel and quarter your onion.
  • Combine all remaining ingredients and quartered onion in your blender. Blend everything together until smooth.
  • Pour the mixture over the chuck roast cubes.
  • Set your slow cooker to cook on low for 8 hours or high for 4-6 hours.
  • At about 30 minutes until your time cooking time has lapsed, shred your beef with 2 forks and mix the beef thoroughly back into the juices.
  • Once the cooking time is up, serve and enjoy!
