Not to toot my own horn, but I’ve never had a better green bean casserole than my own. When it’s true, it’s true. Try and taste for yourself!

This is one of those recipes that has earned its spot at our holiday table every single year without fail. Whether it’s Thanksgiving dinner or a potluck with friends, this green bean casserole is a total crowd-pleaser. It’s the perfect side dish that combines creamy, cheesy comfort with the salty crunch of crispy fried onions. And y’all…we’re not just opening some cans and calling it a day (although we’re still keeping it simple!). This is a step above the classic green bean casserole recipe most of us grew up with, and I promise it’s worth it.

This was my first assigned dish at a work Thanksgiving lunch almost 15 years ago because I was not capable of making anything else. Sometimes you forget to appreciate how far you have come. Looking back on that event is definitely a reminder for me. I was a nervous wreck fixing it and someone besides myself actually eating it. It was probably terrible! Here’s to progress…now let’s make the best ever green bean casserole!

Plus, by stirring some of the french fried onions into the green bean mixture, you get a little crunch in every bite…not just on top of the casserole.

Here’s what you’ll need to make this green bean casserole:

  • 2–3 Tbsp butter
  • 1 medium sweet onion, diced
  • 2 Tbsp minced garlic
  • 1/3 cup real bacon bits or chopped, cooked bacon
  • 1 can (10 oz) cream of mushroom soup
  • Black pepper, to taste
  • Salt, to taste (you likely won’t need much)
  • 1 cup shredded cheese (cheddar cheese works great!)
  • 3 cans cut green beans, drained
  • 1 large package french fried onions

When I make this for Thanksgiving, I typically cook my own green beans from fresh beans before hand. I also make my own cream of mushroom. This really puts it over the top! But we don’t have time for that all of the time, and this version is still going to give you awesome results that will have people asking for the recipe.

Cooking Instructions

  1. Preheat your oven to 350 degrees.
  2. Sauté your aromatics: Melt butter in a large skillet over medium heat. Add diced onions and cook until translucent. Toss in the bacon and garlic, and cook until fragrant.
  3. Create your creamy sauce: Stir in cream of mushroom soup, pepper, shredded cheese, and green beans. Stir until the cheese melts and the mixture starts to bubble.
  4. Add crispy texture: Stir in 1/4 to 1/3 of your french fried onions. Taste test before adding salt, as many of the ingredients already add saltiness.
  5. Transfer and bake: Pour the green bean mixture into a greased 9×13 baking dish. Bake uncovered for 20 minutes, or until bubbly.
  6. Top and finish baking: Remove from the oven, top with remaining french fried onions, and bake another 10–15 minutes until golden brown and crisp on top.

Tips for the Best Green Bean Casserole

  • Use room temperature ingredients to help everything come together evenly.
  • You can prep this ahead! Just follow the instructions up to the bake step, cover the baking dish with plastic wrap or aluminum foil, and refrigerate.
  • For a more homemade touch, try using homemade mushroom cream sauce or sautéing fresh mushrooms to add in.
  • Want to use fresh green beans? Boil them in a large pot half salted water and at least half broth, or use your pressure cooker like I do.

Make-Ahead and Leftovers

This make-ahead green bean casserole is perfect for a stress-free holiday dinner. Prep it the night before, store in an airtight container or covered casserole dish, and bake the next day. Reheat leftovers in a hot oven at 350 until warmed through. You can also reheat a portion of the casserole in the microwave, but that crunchy topping won’t be as crisp.

  • Swap cheddar cheese for parmesan cheese or a blend of both.
  • Prefer homemade green bean casserole? Start with fresh green beans and make a quick creamy mushroom sauce from scratch.
  • Add a splash of soy sauce or Worcestershire sauce for a richer flavor.
  • Want a meatless version? Skip the bacon and use olive oil for sautéing instead of butter.

Ingredients

  • 2-3 Tbsp Butter

  • ⅓ Cup Real Bacon Bits or cooked and chopped bacon pieces
  • 1 Can Cream of Mushroom Soup, 10 oz
  • Pepper, to taste
  • Salt, to taste
  • 1 Cup Shredded Cheese
  • 3 Cans Cut Green Beans, drained
  • 1 Pkg French Fried Onions, large package

Instructions

  • Preheat oven to 350 degrees.
  • Melt butter in a skillet.
  • Add diced onions to the butter and sauté until translucent.
  • Add in the bacon bits and garlic and sauté until warm and fragrant.
  • Stir in the can of cream of mushroom soup, pepper, drained green beans and cheese.
  • Once the cheese is melted, sauce is bubbling and green beans are warm, stir in 1/4 to 1/3 of your french fried onions into the mixture.
  • Now taste test for salt. The cheese, cream of mushroom, bacon and french fried onions are all salty and it is very likely you will not even need salt at all. Also remember, the remaining french fried onions will be put onto the top of the casserole mid baking which will add additional saltiness.
  • Transfer your casserole mixture to a 9×13 greased baking dish and smooth into one even layer.
  • Bake in the oven for 20 minutes or until bubbly.
  • Remove from the oven and top with the remaining french fried onions.
  • Bake in the oven for an additional 10-15 minutes.
  • Remove from the oven, serve and enjoy!
