Try the best mild salsa ever for snacking, kids, and folks with low heat tolerance! Did I mention, this recipe is super easy as well?!

I am a sucker for some Mexican food y’all. There’s really no other option for us when we go out to eat besides eating Mexican food. I can cook the rest, but I haven’t really tried to master Mexican or Tex-Mex food yet…YET! But what I do have is a salsa recipe that everyone enjoys and meets a restaurants standard with only 5 ingredients.
This is another recipe that I cannot take credit for. It’s from my girl, Holly, and her father-in-law, Dean. They showed me how to make it and it’s now another easy “dip/snack/appetizer” in my arsenal! It’s another recipe that is perfect for a last minute get together, or a night at home with friends or family. It’s paired best with tortilla chips and a margarita or two!
Now back to Holly…I cannot go any further until I tell you about this girl! She’s always down for a good time, would do anything for my family, and has the ability to make everyone she loves know it and feel it! She’s so full of life and her carefree personality is infectious! Did you know I spilled this very salsa all over her kitchen counters, floor, and myself one time. Thank the Lord she is who she is and just laughed! Let’s just say, not all blenders work the same and I had some major user error occur!
Holly, her husband Kyle, myself and my husband Chance all went to high school together. To say we have a few stories on each other would be an understatement!
Kyle and Holly are local farmers here in our area and like us, simple ol’ country folk is just who they/we are. We were country…when country wasn’t cool! Their family is like our family and they are true ride or die friends. We might not be able to get together as much as we’d like anymore…these kids keep us too dang busy and tired, but these are friends we can go 6 months or more without seeing and pick right back up where we left off. We are so thankful for them and they will always have a piece of my heart!
Now back to our regularly scheduled program…salsa time!

Why I Love this Simple Snacking Mild Salsa

Other than it being from my best girl, there are several reasons this salsa gets made on the regular at Farmhouse 181:
- It’s only 5 ingredients.
- No special prep. If you have a blender, this recipe is done in less than 5 minutes.
- It tastes like a fresh salsa, but isn’t all fresh ingredients
- This salsa is mild and perfect for sissies like myself or kids
- It’s tasty and I’d rather eat it than many restaurant salsas
Ingredients Needed for this Mild Salsa

- Canned Diced Tomatoes
- Rotel, or diced tomatoes and green chilies
- Onion
- Fresh Cilantro
- Salt
This is everything in this salsa. It’s not like me to say this, but I have never made substitutions, and don’t recommend it. The recipe is simple and great as is. If anything were different, I don’t think it would be the same. The only substitute I can stand by and recommend is using a mild Rotel vs the original Rotel. The mild lends an even milder salsa and is my choice if I have it!
Equipment Needed
You will need a blender for this salsa. I have a 12 plus year old Ninja blender that I use and it’s still going strong. It only has one speed and works just fine for this mild salsa! Use the full-size blender pitcher and not a cup or protein shake size attachment.
Just make sure you know how to use your blender or your friend’s blender to avoid a salsa incident in your kitchen…right Holly?!
Instructions for Mild Salsa
Rinse your fresh cilantro and break off the stemmy ends. Don’t over complicate this. I twist off the cilantro where the band is located and throw the stemmy end away, or I usually give it to my chickens.
I cut off the ends of my onion, peel the skins off and quarter it into chunks.

Put your cilantro into the blender first so you can fit all your salsa ingredients more easily. This way, you don’t have to fight your cilantro on the top and getting all the leaves in the blender or rough chop your cilantro first. Less steps is more!
Add your cubed onion on top of the cilantro in your blender. Then add the canned diced tomatoes, Rotel, and salt.

Don’t forget to put on that lid! Now pulse and blend your salsa ingredients until you no longer see large chunks of onion inside the pitcher. Open it up and taste test! If you like more salt, add a little more and pulse again.
Store your salsa in a bowl with lid, plastic container, or our favorite storage solution, a mason jar. One batch of this salsa fits perfectly in quart size mason jar. Keep in the fridge for the week or so.

Now serve with your favorite tortilla chips! Ours are whatever brand we have in the pantry, but I do prefer a thin or cantina style chip.
Eat this salsa with your family and friends at a get together, just the family at home, or by yourself…it tastes just as good in each scenario! Serve it up with your favorite Mexican food meal or on a weeknight when you are slinging out some quick quesadillas!

The Best Snacking Mild Salsa
Equipment
- Blender
Ingredients
- 1 Bunch Fresh Cilantro
- 1 Medium Sweet Onion (or half a large sweet onion)
- 1 Can Regular or Mild Rotel (diced tomatoes and green chilies)
- 1 Can Diced Tomatoes
- ½-1 Tbsp Salt, to taste
Instructions
- Rince your bunch of fresh cilantro and shake off the excess moisture.
- Break off the cilantro stems. I usually just break off the stems at the band and discard them.
- Put your cilantro into the blender first.
- Cut the ends off of the onion and peel off the skins. Quarter your onion and put the pieces into the blender.
- Put the can of diced tomatoes, Rotel, and salt into the blender.
- Pulse and blend your salsa until you no longer see any large chunks of onions.
- Taste test and add more salt, if needed.
- Pour your salsa into an airtight container and keep in the fridge.
- Serve with tortilla chips and enjoy!
