Equipment

  • Blender

Ingredients

  • 1 Bunch Fresh Cilantro
  • 1 Medium Sweet Onion (or half a large sweet onion)
  • 1 Can Regular or Mild Rotel (diced tomatoes and green chilies)
  • 1 Can Diced Tomatoes
  • ½-1 Tbsp Salt, to taste

Instructions

  • Rince your bunch of fresh cilantro and shake off the excess moisture.
  • Break off the cilantro stems. I usually just break off the stems at the band and discard them.
  • Put your cilantro into the blender first.
  • Cut the ends off of the onion and peel off the skins. Quarter your onion and put the pieces into the blender.
  • Put the can of diced tomatoes, Rotel, and salt into the blender.
  • Pulse and blend your salsa until you no longer see any large chunks of onions.
  • Taste test and add more salt, if needed.
  • Pour your salsa into an airtight container and keep in the fridge.
  • Serve with tortilla chips and enjoy!
