Simple Sweet Potato Casserole with Pecan Topping

Sweet Potato Base Layer
- 4 Cups Sweet Potatoes, cooked and mashed
- 1 Cup Sugar
- ½ Cup Butter, melted
- ½ Cup Milk
- 1 tsp Vanilla
- 2 Eggs
Pecan Crumble Topping
- ¾ Cup Butter
- ¾ Cup Flour
- 1½ Cup Brown Sugar
- 1½ Cup Pecans, chopped
Sweet Potato Base Layer
Preheat oven to 350 degrees.
Peel and cut your sweet potatoes into large chunks and boil for about 20 minutes or until fork tender.
Remove from boiling water and mash or whip with an electric mixer.
Mix all of the base layer ingredients into the mashed sweet potatoes.
Pour sweet potatoes into a 9*13 baking dish that has been sprayed with non-stick cooking spray.
Bake the sweet potato base layer for 25 minutes.
Pecan Topping
In a medium sauce pan, melt the butter for the topping over low heat. Stir in the remaining ingredients and cook on low until sugar is mostly dissolved. Pour the pecan topping onto the base layer of the casserole.
Bake in the 350 degree oven for an additional 25 minutes.
Remove from oven, let cool, then enjoy!
